Potato Pancake (I think?)

In line with matt303‘s suggestion, I took some of the mashed potatoes which were leftover from Thursday and mixed them together with a whisked egg. Then I added a small handful (all that I had left) of some pre-shreadded cheddar cheese.
This mixture was then placed in a small non-stick skilled containing some melted butter and cooked. After about 10 minutes it was turned with the assistance of a plate (to keep it from falling apart) and cooked for somewhere around another 10 minutes. This was then served with some salad, a glass of water, and a Cadbury Creme Egg.
Next time I make this I will likely make two smaller cakes which will fry quicker and be easier to turn. Other than that (and the lettuce for the salad being a bit brown) it was excellent.
Oh, and I also just finished The Wizards of Langley: Inside The CIA’s Directorate of Science and Technology. It was okay, but the political infighting discussions wore on me a bit, and the author’s analysis of the CIA’s future at the end feels like a somewhat forced way to wrap up the book.
Yum! Cadbury Creme Eggs are the best. I will miss them the most this Easter.*
*My mom always does an Easter egg/stuff hunt for me (and now Les too) on Easter.
Hehe, you can’t get them there? Whenever I’m at Target I tend to buy a four-pack, just to keep around. :D
I’ve found that when I make these spinach rosemary griddlecakes that smaller is also better. I love these things, and they are almost as good microwaved as fresh!
Oh, neat. I’ll have to try those… I have to say, this came out really good for being some cobbled together thing based on a quick recommendation from a friend.
They are VERY tasty, and unlike a lot of vegetarian ‘main dishes’ they really do fill me up. I do’nt know, I must not be trying the right stuff.
Here is what we had for dinner last night.
Ingredients:
1 box of penne pasta
1 can of pasta sauce (I forgot what brand we used)
1/2 pound of ground beef (you can omit this out if you’re vegetarian)
1 cup of cheddar and mozellerla mix
Instructions:
Boil the pasta for 10 minute until done. Heat up a sauce and ad 1/2 teaspoon of olive oil, pour the ground beef in and brown it. Pour the pasta sauce in. After the pasta is done, drain the pasta. Combine the cheese, beef, pasta and sauce and mix well. Place this in a medium size bake dish. Cover the dish with aluminum foil and bake for 30 minutes at 350 degree. Be sure to preheat. Makes for a yummy dinner!
