These are some ginger cookies that I found on allrecipes.com. They take a good bit of time to prepare, but are worth every bit of effort.


Ingredients

  • 3/4 Cup Butter
  • 1 Cup Brown Sugar (Packed)
  • 1 Egg
  • 1/4 Cup Molasses
  • 2 1/4 Cup All-Purpose Flour
  • 2 Teaspoons Ground Ginger
  • 2 Teaspoons Baking Soda
  • 1/2 Teaspoon Salt
  • 1 1/2 Tablespoons Minced Fresh Ginger Root
  • 1/2 Cup Chopped Crystalized Ginger


Oven Temperature

350°F


Steps

  • In the work bowl of a mixer, cream together the butter and brown sugar until smooth.
  • Beat in the egg and molasses.
  • Sift together the ground ginger, baking soda, and salt.
  • Slowly add the sifted together ingredients to the butter/sugar cream.
  • Mix the fresh and crystalized gingers in with the dough.
  • Cover dough and refridgerate for at least two hours.
  • Shape the dough into 1 inch balls and roll in sugar.
  • Place dough balls 2 inches apart on an ungreased baking sheet.
  • Bake for 10 minutes or until lightly brown.
  • Cool cookies in a wire rack, then store in an air-tight container.

  • Bake for 15 minutes for perfect cookies.
