These are some ginger cookies that I found on allrecipes.com. They take a good bit of time to prepare, but are worth every bit of effort.
Ingredients
- 3/4 Cup Butter
- 1 Cup Brown Sugar (Packed)
- 1 Egg
- 1/4 Cup Molasses
- 2 1/4 Cup All-Purpose Flour
- 2 Teaspoons Ground Ginger
- 2 Teaspoons Baking Soda
- 1/2 Teaspoon Salt
- 1 1/2 Tablespoons Minced Fresh Ginger Root
- 1/2 Cup Chopped Crystalized Ginger
Oven Temperature
350°F
Steps
- In the work bowl of a mixer, cream together the butter and brown sugar until smooth.
- Beat in the egg and molasses.
- Sift together the ground ginger, baking soda, and salt.
- Slowly add the sifted together ingredients to the butter/sugar cream.
- Mix the fresh and crystalized gingers in with the dough.
- Cover dough and refridgerate for at least two hours.
- Shape the dough into 1 inch balls and roll in sugar.
- Place dough balls 2 inches apart on an ungreased baking sheet.
- Bake for 10 minutes or until lightly brown.
- Cool cookies in a wire rack, then store in an air-tight container.

- Bake for 15 minutes for perfect cookies.
