This is Alton Brown's Omelet recipe from Good Eats. I like it because it's basic and tastes great. It seems that most people don't know the basic steps for making a simple omelet.


Ingredients

  • 3 Eggs
  • 1 1/2 Teaspons Butter (Room Temperature)
  • Chives / Black Pepper / Topper


Steps

  • Warm the eggs in hot water for five minutes.
  • Heat a 10 inch non-stick pan over medium high heat.
  • Crack eggs into a bowl, add salt, and blend with a fork or whisk. ยท Once the pan is hot, add 1 Teaspoon of butter and brush it around the surface of the pan.
  • Pour the eggs into the center of the pan and stir vigorously with a rubber spatual for 5 seconds.
  • As soon as a semi-solid mass begins to form, lift the pan and move it around so the excess liquid pours off the semi-solid mass and into the pan.
  • Use the spatula to help round and loosen the edge of the omelet.
  • Let the omelet sit in the pan for 10 seconds without touching it.
  • Shake the pan to loosen the omelet.
  • Lift the far edge of the pan and snap it back towards you.
  • Using the rubber spatula, fold over 1/3 of the omelet.
  • Slide the omelet on to the plate.
  • Fold over the remaining third of the omelet.
  • Coat the omelet with the remaining butter, sprinkle with chives and/or black peper.
  • Serve immediately.
