Hummus

About

This is my personal favorite hummus recipe. Just simple garlic hummus, nothing more. Best served with good pita bread. Don't just buy the thick fluffy crap from the grocery store... Make sure you find a Middle Eastern market where you can get thin, quality pita. Or make it yourself. Or skip the pita and dip veggies in it. Up to you...


Ingredients

  • One Can (~15 oz) Chick Peas (Garbanzo Beans)
  • Juice of 1½ Fresh Lemons
  • 3-5 Cloves of Garlic (To Taste)
  • 1/3rd Cup Tahini
  • Large Pinch of Salt (To Taste)
  • Extra-Virgin Olive Oil
  • Thin, High Quality Pita Bread


Steps

  • Place garlic, lemon juice, salt, and chick peas in a small food processor.
  • Process ingredients until a smooth, thick paste is formed.
  • Transfer paste to appropriately sized bowl and stir in tahini.
  • Top hummus with thin layer of olive oil and serve with pita bread.
