Golden Ale

For my third beer I decided not to use a kit, so I went looking for a recipe. After poking around the Realbeer.com Forums for a while, I came up with what was originally titled "Tall Beautiful Blonde Gold Ale" from Soignier Brewing Co. Not liking this name, I decided to simply shorten it to Golden Ale.

While I don't know quite what style this is supposed to be, it strikes me as a Belgian-ish ale. Regardless, both myself and everyone I have given a bottle to has really enjoyed it. I can see a number of batches of this being made, as it's a good beer to just keep around.


Ingredients

Grains

  • 4 lbs Alexander's Pale Malt Extract (LME)
  • 1 lb Munton's Light (DME)
  • 3 lbs Munton's Extra Light (DME)


Hops

  • 1 oz Hallertauer Pellet Hops (Bittering)
  • 1 oz Mt. Hood Pellet Hops (Flavoring)


Yeast

  • 1 vial White Labs WLP051 (California Ale V) Yeast (Stepped To One Pint Starter)


Other

  • 1 Tsp Irish Moss
  • 1 Tbsp Toasted Coriander Seeds
  • 3/4 Cup Priming Sugar (Corn)


Gravity

OG: 1.058

FG: 1.010


Alcohol

Calculated ABV: 6.5%


Steps

  • Boil for 60 minutes, LME and DME added at start of boil, to as much water as will comfortably fit in the pot.
  • Add Hallertauer hops at 60 minutes left in boil.
  • Add Mt. Hood hops and toasted coriander at 30 minutes left in boil.
  • Add Irish moss at 15 minutes left in boil.
  • As scum (fats, etc) appeared on the top of the boil kettle, let them collect into a large mass, then skim them with a large spoon.
  • Pitch yeast at 75°F and ferment at 70°F - 75°F. Should finish in about a week.
  • Rack to secondary and let clarify for two days.
  • Bottle, and allow to condition for 14 days.


Notes

  • Skimming scum from top of kettle may not be desirable, as it may remove some of the hop oils.
  • Primary fermentation completed in my first batch after approximately 8 days.
  • Beer was enjoyable as soon as it was carbonated, appriximately 14 days.
