Ginger and Spice Cookies

These are a very good Autumn / Christmas-Time cookie. They go great with a mug of mulled apple cider.


Ingredients

  • 2 Cups Sifted All-Purpose Flour
  • 1/4 Teaspoon Baking Soda
  • 1/4 Teaspoon Ground Ginger
  • 3/4 Teaspoon Ground Cinnamon
  • 3/4 Teaspoon Ground Cloves
  • 1/4 Teaspoon Salt
  • 1 Egg
  • 1/4 Cup Unsulfured Molasses
  • 1/2 Cup and 2 Tablespoons White Sugar
  • Small Bowl of Sugar for Finishing Cookies
  • 1/2 Cup Unsalted Butter
  • 1/2 Teaspoon Vanilla Extract


Oven Temperature

350°F


Steps

  • Cream the butter and sugar until it is light and fluffy.
  • Mix in the molasses, vanilla, and eggs.
  • Sift the flour, baking soda, ginger, cinnamon, clove, and salt together.
  • Gradually stir the flour mixture into the butter mixture.
  • Make walnut-sized balls of dough, drop the balls of dough in the sugar, and coat them completely.
  • Line a baking sheet with parchment and place dough balls on sheet approximately 2" apart.
  • Bake for 14 to 15 minutes, or until golden brown.
  • Let cookies cool on a wire rack, then transfer to an air-tight container for storage.

  • Bake for 18 minutes and cookies will be done.
